Pumped-up Pasta

Pumped-up pasta is an easy way of adding nutritional value to an week night dinner.




1 Jar of Preferred Pasta Sauce


3-4 Veggies finely chopped such as: onion, zucchini, green/red pepper, carrots, etc


Box of Spaghetti- Whole Grain


Boil pasta according to package directions.  Be sure to watch the portion sizing.  The average spaghetti package contains 8oz.  The proper portion for one is only 2 ounces


Saute the vegetables in 1 tsp of olive oil.  If you are using onions, add them first and allow them to cook for 3-4 minutes before adding the other vegetables.  Saute for 3-4 minutes more and then add the entire jar of pasta sauce and allow it simmer at a low temperature for 15-20 minute while covered.  Serve sauce over pasta. To make this meal complete, add protein!  Top sauce with some grilled chicken breast or turkey.
